This month’s Recipe ReDux theme is nuts!

We had to take advantage of the fact that National Nut Day (October 22nd) falls on one of our ReDux monthly theme post days – so we can all go nuts! Share a healthy nut-filled recipe: Think whole nuts, chopped nuts, ground nuts, nut butter and/or nut flour. And Happy Nut Day!

I am here to tell you that it is okay to put whipped cream in your oatmeal…well, whipped macadamia “cream.” Since macadamia nuts, like cashews, are very buttery and fatty, they blend up into a rich cream. Unlike making nut milks, making a nut cream uses the entire nut without discarding any nut pulp, so you get the creamy texture and the beneficial fiber all in one. Continue reading

Exciting News + Sesame Tofu Summer Rolls

Before we delve into the world of summer rolls, I have some news! Last week I officially became a registered dietitian nutritionist otherwise known as an RDN. It took many years of school, a year-long internship, and a big test but now I can finally call myself Stephanie Lang, MS, RDN.  And gee, it feels good. I look forward to using my degree and credential to help people make good, delicious, healthy food choices.

And now…back to summer rolls.

In case you haven’t heard, everything everywhere is all about the seeds, and these black sesame seeds are at the top of the hot list. Seeds add texture and appeal to baked goods, and they are pretty darn good for us, too.

Cookie Dough Greek Yogurt

This coming Thursday, I will graduate from my dietetic internship. I am so excited and exhausted and terrified all at the same time. Change is coming around these parts. Next up, I have to study for, take, and pass an exam to become a registered dietitian nutritionist (RDN) and somewhere in between I have to find a real job. Goodness.

My last dietetic internship rotation was considered my elective, and I chose to help with a research study looking at how food affects the way children eat. Continue reading

(Black Bean) Brownies! Take 2

IMG_1731Oh, how I love a good brownie. Let me count the ways…This will be my fifth blog post about brownies (sixth if you count blondies), and my second recipe for black bean brownies (see the first recipe here).

These super fudgy chocolate cookie squares contain a whole can (1 1/2 cups) of black beans. And guess what else? The brownies are made without butter, eggs, or flour. WHAT?! How can they possibly be good? They are not good, they are great, and here is why.  Continue reading

Cranberry and Cilantro Quinoa Salad

IMG_1718Here’s a quick and easy quinoa salad for all of your spring and summer picnics and barbecues, your weeknight dinners, and your lunchbox fillers. Jam-packed with a rainbow of bell peppers, carrots, leek (or scallion), dried cranberries, and fresh cilantro, and dressed with a few squirts of lime juice and some olive oil. Quinoa cooks very quickly, usually within 10 to 15 minutes. The rest of the salad is just chopping, squeezing, and tossing, and that’s about all I want to handle when the sun is shining here in New York City after such a long winter. Chickpea Vegetable Pancakes with Yogurt and Urfa ~*Recipe ReDux*~

This month’s Recipe ReDux theme is ‘Spring Cleaning:’

“Go through your pantry, cupboards, freezer, or fridge; what ‘treasures’ have you found? Pick an ingredient/spice/condiment that’s been hanging out for a while and give it the attention it needs. Share a healthy recipe made using your new-found pantry prize.” 

Some hidden ‘treasures’ that I found in my kitchen include: pine nuts, canned pineapple, chocolate balsamic vinegar, amarena cherries, anchovies and anchovy paste, and capers. If anyone has suggestions for what to do with some of these ingredients please let me know in the comments. These ingredients have been patiently waiting to be used for a long time now.

Ultimately, I decided to focus my attention on the chickpea flour that has been hanging out in my pantry. Continue reading
